Bake a cardamom cake - the Moomin way

To celebrate the launch of Moomins Cook book by SelfMadeHero, the Embassy of Finland reveals the secrets to the tasty dishes prepared by the wonderful Moominmamma by publishing a Recipe of the Month – until the end of 2010.

According to the Moomin philosophy, everything fun is good for the stomach. The darkening November evenings are just perfect for baking, aren't they?

Lingonberry and cardamom cake

According to Moomin philosophy, everything fun is good for the stomach!2 tsp baking soda
250 g wheat flour
250 g brown sugar
2 tsp dried ginger
2 tsp cinnamon
2 tsp ground cloves
2 tsp cardamom
80 g puréed lingonberries (or similar berry)
2 eggs
200 ml cream
90 g melted butter

For the dish:
a knob of butter or margarine
breadcrumbs or semolina

Mix the baking soda into the flour. In a bowl, mix the flour, sugar and seasonings. Add the lingonberries, eggs, cream and the cooled butter. Quickly mix the ingredients until smooth.

Pour the filling into a greased, breaded quiche dish. Bake the cake at 175 C for around 60-70 minutes. If you leave the cake to rest overnight, the taste will improve.

Moomins Cook book, published in the UK in July, contains over 150 different forest recipes for drinks and dishes – from breakfast at the end of a sunny Nordic summer night to garden parties, campfires and birthday celebrations. The recipes are a wonderful introduction to Finnish cuisine; presented by the season and easy to make, they’re great for the young and old alike.
